These pancakes are a perfect way to start your weekend. They're flour and refined sugar free so you will not feel weighed down by eating a couple.. or thr whole batch.
Start by mashing your ripe bananas with a fork in a big bowl. The riper the bananas are, the sweeter the pancakes will turn out.
When the bananas are mashed, whisk in the eggs, oats and vanilla. If you wish to use psyllium for extra fibre add that in the mix too. Psyllium absorbs a lot of moisture, so you may need to add a bit of almond milk to thin out the batter. The batter should be quite thick yet runny enough to fall of a spoon easily.
Put some coconut oil on a hot pan and start frying the pancakes. Don't make them too big or they will break while flipping. Fry on one side for about 3 minutes until it starts to dry on the top, if you flip it too early the pancake can break. Fry for a minute on the other side.
Serve with anything you'd like - for example chia seeds, berries, nut butters or maple syrup!
